Hi friends! Let’s get straight to the point:
the recipe
Hashbrown Casserole
OK I’m not sure of the origins of this recipe. Well, I know the origins of it in my family - someone shared it with my mom when she signed up at church to bring food to serve at funerals (I was in kindergarten at the time, so no recollection of this). But, as far as who actually came up with it, it’s lost to time!
I’m pretty sure that like half of Midwestern households have a variation of this cheesy, potato-laden casserole. We eat this one on all major holidays.
for the casserole
2 pound package frozen hash browns, thawed
1/2 cup (1 stick) melted unsalted butter
2 cans condensed cream of mushroom (or cream of chicken) soup
1 pint sour cream
1/2 cup coarsely chopped yellow onion
2 cups grated sharp cheddar cheese
1-1/2 teaspoons kosher salt
1/2 teaspoon pepper
for the topping
2 cups cornflakes
4 tablespoons (1/2 stick) melted unsalted butter
the how to:
Preheat the oven to 350 degrees F and butter a 9x13” glass or ceramic dish. In a large bowl, mix together all of the casserole ingredients. Spread the mixture evenly in the dish.
In a medium bowl, stir together the topping ingredients. Evenly top the casserole with the cornflake mixture.
Bake at 350 degrees F for 45 minutes. Serve warm.
Store in the fridge, covered, for up to 3 days (good luck with that though!)
*Note: if you want to brown your butter here, I support it.

baking tip of the week
We love temperature accuracy <3. Figure out if your oven temp is accurate (mine is not!) by getting an oven thermometer (I have this one). See if the oven’s actual temp matches up with what you set it to (mine runs about 25 degrees hot). If it does, amazing. If not, adjust the temp you’re setting it to moving forward.
