a recipe
We made a really delicious Ghanaian-inspired fresh pepper sauce this week, courtesy of my bff and first/favorite craigslist roommate, Anna. I recommend you make it immediately (it’s good on lots of things, we ate it with boiled then air fried yuca). Blend up 1lb of tomatoes and half a medium red onion. Add half a habanero (seeds removed) and salt to taste (more than you think - taste before committing to a final product). Blend it again, and that’s it. Store in the fridge.
a baking tip
how to brown butter:
Heat a small skillet over medium heat. Add the butter and stir with a rubber spatula until the butter looks golden brown (not dark brown!) and smells nutty, stirring often. Watch it carefully and remove it from the heat as soon as it reaches a deep caramel color.
